Apple and Pear Crumble

Too many apples, too many pears. Not much time to make a much more elaborate dessert, so it was time to whip up some crumble. Instead of making a large dish this time, however, I made 3 large individual serves.

First, I diced apples (yellow) and pears (green) separately, mixed with some lime juice and zest, and a small amount of sugar. Then I filled each dish halfway with apples, and filled the remaining half with pear. This made for a very nice difference in color before adding the crumble mix.

Then I covered the whole dish with a crumble mix (flour, brown sugar, butter) in which I had mixed some oats for extra fiber and fun. I then decided to make a difference between the apple and pear side, so more oats were sprinkled over the pear half, and chia seeds over the apple half.

Each dish was then baked for about 20 to 30 mins at 130˚C to crisp the topping, and make the fruits tender. These dishes were quite large for individual serves.

Apple Crumble Pie Bar

Three apples, sitting in a basket. Getting all wrinkled, and not so fit for eating raw. What to do when short on time? Well my quickest option was probably an apple crumble. But I wanted something a little more solid, so I opted for a kind of bar-version of this apple crumble.

All I did was make half of the crust/crumble mix recipe. I pressed half of that into a loaf pan, spooned in apple mix, and crumbled the rest of the crumble mix on top. After baking about 20 mins and letting it cool, I had something that was both tasty and easy to cut. I still have leftover apple mix (didn't really measure out the ingredients for that, and ended up with too much compared to the crust mix), so I'll have to think of something to do with that.

Crumble du Chat qui Tousse

For a dinner among friends (a vegetarian sushi dinner, if you're curious), I originally hadn't planned any desserts. That was until I looked at the fruits basket and saw the apples that had been sitting there for weeks.

An easy dessert to make with apples? Apple crumble. A friend had given me these glass ramekins from some purchased desserts. As they seemed fairly sturdy and thick, I figured they could handle some time in the oven.

RECIPE
  Ingredients
  • 3 apples
  • 75 g brown sugar
  • 75 g flour
  • 50 g unsalted butter
  • 1 pack vanilla sugar
  • 1/2 lemon's juice
  • cinnamon
  Procedure
  1. Take butter out 1/2 hour ahead of time.
  2. Preheat oven 180°C.
  3. Peel, core, and dice apples, and put them in a baking dish, or several ramekins.
  4. Pour lemon juice, vanilla sugar, and cinnamon on the apple pieces.
  5. In a bowl, mix flour and brown sugar. Add small cubes of softened butter.
  6. Rub butter into flour mix to obtain a sandy mix.
  7. Sprinkle crumble mix on top of the apples until covered.
  8. Bake for 1/2 hour, a little less for ramekins.
  9. Enjoy with a scoop of vanilla ice cream.

Apple Crumble Pie

December 8th

Hallway dinner with a Dutch theme, and the last dinner of the semester? Of course I'd go with dessert! I quickly googled an apple pie recipe, and came across this one. I was very interested due to the use of oats in the crust/crumble mix! I also had apples to use up, so it was all in all a great recipe to use.

It was a little messy to serve, but tasty! After eating it, however, I would recommend reducing the amount of sugar in the recipe, as it was a little too sweet to my taste. Maybe I would even add more oats, but basically, I really want to play around some more with this recipe!
